SANTORINI PROTECTED DESIGNATION OF ORIGIN (PDO)

The traditional edition of Santorini with a modern twist. It was born in the 2019 yield when THALASSITIS OAK FERMENTED was renamed NYCHTERI by GAIA.

As always, the classic nerve and the sharp acidity of Assyrtiko are not hidden, but in this case, they have allied with a roundness, a greasiness and a volume that make this wine amazingly enjoyable.

Tasting Notes: Butter, Honey, Stone Fruits, Minerality

Fermentation and aging take place in different kinds and sizes of barrels. The wood is present, with notes of vanilla, all totally harmonized with the aromas of Assyrtiko.

Winemaking

Vineyard Age: 70 – 80 year old ungrafted vines with over 3 centruries old root
Elevation: 150m
Vinification/Maceration: Skin cold soaking for 12 hours at 10 °C prior to fermentation
Fermentation: New oak barrels
Malo-lactic Fermentation: No
Fining: Bentonite & cold stabilization. No animal products or allergens have been used.
Ageing/Maturation: 4 months in first use oak barrels
Filtration: Yes
Vegan: Yes
