Microclimate:
Predominantly Mediterranean climate but with mountainous influence due the proximity with Mt. Pangeon. Reasonably mild winters with cool summers help for the ideal ripening of the grapes.
Vineyards:
The vineyards are situated at 380 meters altitude in choky-clay, stony soil. The environmentally friendly cultivation of the vines follows strict standards of Organic Agriculture.
Vinification:
This is a high aromatic blend with a crisp finish thanks to brief maceration on the skins foregoing temperature – controlled fermentation in stainless steel tanks.
Tasting notes:
Ktima Biblia Chora white is an uplifting wine from the marriage of the cosmopolitan Sauvignon blanc with the exuberant Greek Assyrtiko. This dry white wine has a clear greenish gold colour. Its nose is a very fragrant bundle of nettle and lashings of tropical fruits interlaced with citrus aromas of lemon and pink grapefruit. It’s a fuller – flavoured, scented blend with great body, racing acidity and great length.
Food pairing:
It pairs well with delicate fish and seafood dishes, all kinds of green salads and a variety of white cheeses.
