The new wine from Estate Argyros
“Cuvee Palatia,” or by its full name, “The Palaces of Monsignori,” draws its name from the area where the Monsignori resided and is the newest addition to Estate Argyros’ portfolio. It is a single-varietal Assyrtiko that joins the already acclaimed Cuvee range (Monsignori, Evdemon, Gerontampelo), all of which aim to both push the boundaries of the Santorini terroir and highlight the diversity of the island’s individual vineyard plots.
Cuvee Palatia has been under the microscope at Estate Argyros for over a decade, with this final bottling representing the culmination of systematic study of Santorini’s land. More specifically, it is a complex mosaic of fruit from seven outstanding vineyard sites that the Argyros family has cultivated for many years: Kavaleros, Louros, Ftelos, Vassalia, Kamarades, Agios Ioannis, and Kastana. Seven plots in diverse locations that, surprisingly, all converge on a common denominator: generosity and elegance.

VITICULTURE & VINIFICATION
The average age of the vines ranges from 120 to 180 years. Cultivation follows the high standards set by the estate’s heritage and history since 1903, involving intense manual labor under extreme weather conditions and a very selective harvest to ensure only the finest grapes reach the winery. Fermentation begins in stainless steel tanks using indigenous yeasts to preserve the pure, crystalline character of Santorini, followed by nine months of aging on fine lees with regular bâtonnage. The result is a remarkable wine that also offers a distinct expression within the Cuvee series.
And that, after all, is the aim of this series: to capture the various reflections of the Santorini terroir. Alongside the structured finesse of “Cuvee Monsignori,” the power of “Cuvee Evdemon,” and the floral nature of “Cuvee Gerontampelo,” comes a more delicate interpretation: Cuvee Palatia.
TASTING NOTES
On the nose, Cuvee Palatia carries the characteristic volcanic notes of Santorini, a Doric minerality reminiscent of sculpted flint, along with elegant floral hints of jasmine and touches of Mediterranean herbs like Cycladic savory. On the palate, it delivers a “graceful attack” with Assyrtiko’s hallmark sharp acidity, a rich body, and a long, saline finish that speaks to the vineyards’ proximity to the Aegean Sea.
