Consultants: Andreas Pandos-Dimitris Kyritsis

Variety Composition: Xinomavro 70%-Krasato 25%-Stavroto 5%

Location: ‘Tourtoura’ Rapsani Mount Olympus

Vineyard: Planted 1952 organic at 510-560 altitude

Harvest: Manual harvesting.  6 October

Density: 8,500 vines / ha. Bush vines.

Yield: 29 HL/ha

Soil:    The soil consists mainly of iron-rich schist. The iron in the soil is an important quality factor, since it regulates the water capacity of the soil. The soil is poor in organic substances. Its structure enables the penetration of the roots into the sub-soil, so that the vine does not suffer from lack of moisture during the summer. The sub-soil is sandy-clayey.

Vinification Method & Maturation:
50% whole bunch, 12 days skin contact under controlled conditions, alcoholic fermentation at gradual increase temperatures, maturation “sur lie” for 18 months in light toasted French oak 300L (33% new) with regular stirring. Malolactic in the barrels.  No treatment or filtration before bottling.

Analytical Data:

Alcohol: 13,7% vol.,

Total Acidity: 5,88 g/l,

Residual Sugar: 1,9 g/l,

pH: 3,45
