The grapes come mainly from its mountain vineyards Heraklion. After cooling to 5 ° C follows careful sorting. The vinification is done with native doughs in 4 different materials, in parallel: in clay amphorae of different capacities, concrete tank, large oak barrels (600lt) and stainless steel tanks. The slow fermentation of many different smaller batches leads to one extremely interesting result in terms of aromatic complexity, while the further maturation for 6 months, gives Vidiano the depth and structure of a large white. The wine is bottled unfiltered to keep on
maximum of its natural character in combination with elegance.

Tasting Notes:
Complex nose with notes of citrus flowers, white fruit and lemon, on a metallic background. The mouth, rich, spreads to different levels, with fine acidity that ensures the balance, while giving it a characteristic freshness and persistent aftertaste.
Food Matching:
It combines extremely with seafood, fish, pasta with white sauces, cheeses and exotic cuisine (Japanese, Thai, etc.)
