Winemaker: Louiza Dougou

Consultant: Andreas Pandos

Variety Composition: Limniona 40%-Syrah 30%-Grenache 30%

Location: ‘Prosilia’ Rapsani Mount Olumpus

Vineyard: Planted 1991 at 380-430 altitude

Soil:    The soil consists mainly of iron-rich schist. The iron in the soil is an important quality factor, since it regulates the water capacity of the soil. The soil is poor in organic substances. Its structure enables the penetration of the roots into the sub-soil, so that the vine does not suffer from lack of moisture during the summer. The sub-soil is sandy-clayey.

Harvest: Manual harvesting.  August, Syrah-Grenache 2 September, Limniona 12 September

Density: 4,400 vines / ha.

Yield: 29 HL/ha

Vinification Method & Maturation:
17 days skin contact under controlled conditions, alcoholic fermentation at gradual increase temperatures, maturation “sur lie” for 18 months with regular stirring. No treatment or filtration before bottling.

Analytical Data:

Alcohol: 14,26% vol.,

Total Acidity: 5,98 g/l,

Residual Sugar: 1,9 g/l,
