In order to balance the fruit with the oak, the wine ages for 12 months in french oak barrels of which 25% new.

It will continue to evolve for at least 15-20 years after the harvest year.

Tasting notes:

Bright and dense, purple red.

Well structured bouquet, combining aromas of red forest fruit, cherry jam and spices on a discreet oak background.

Warm and full at first, it then unrolls its richness, structure and its noble tannins. The long finish sees the return of of the aromas of fruit and spices.

Food pairing:

Loves all red meats but is especially fond of lamb chops or oven baked leg of lamb. A joy with a red sauce beef casserole or soft mature cheeses like brie or camembert.
