Microclimate: Predominantly Mediterranean climate but with mountainous influence due the proximity with Mt. Pangeon. Reasonably mild winters with cool summers help for the ideal ripening of the grapes.
Vineyards: The vineyards are situated at 380 meters altitude in choky-clay, stony soil. The environmentally friendly cultivation of the vines follows strict standards of Organic Agriculture.
Vinification:
This varietal wine takes its unique character from prolonged maceration of the grapes, extended ageing in new French oak barrels for 16 months and maturation in bottle for further 24 months prior to its release.
Tasting notes:
Ovilos red is a pure Cabernet Sauvignon made from our first vineyard block at the foot of the Pangeon Hills. It has a deep blackish claret red colour. Its complex bouquet brims over with intriguing smells of ripe fruit, cassis, cedar wood, violet flowers and tobacco leaf. The palate of this well – balanced, vibrant red wine delivers an abundance of flavours of black cherries and raspberry jam, all entwined with a touch of sweet chocolate and acute tannins for longevity.
