Viticulture – Winemaking:
Grapes are sorted carefully and pressed with whole clusters in a vertical press. Fermentation takes place in INOX tanks, open top barrels and concrete tanks. After 9 months of aging on their fine lees, grapes are ready for blending and bottling. Aging is taking place in old barrels, concrete tanks, and inox tanks. No new oak is used in order to preserve all the fruity character of the varieties.
